Instructions

  • Preheat oven to 350°F/175°C
  • In a large bowl, mix the dry ingredients (oats, nuts and seeds, coconut, salt, and cinnamon). Set aside.
  • In a pot on the stove add the coconut oil, maple syrup, and vanilla. Heat until the coconut oil is melted.
  • Pour the contents of the pot into the bowl of dry ingredients.
  • Stir until all dry ingredients are coated.
  • Pour the mixture onto a baking pan in an even layer of about ½ inch thickness.
  • Bake for 25 min or until golden brown and smelling deliciously toasted
  • Keep an eye on the granola while it bakes, especially if you have an oven that runs hot. It can go from brown to burnt quickly. Trust your nose!
  • Let the granola cool in the pan.
  • Once cooled, add ½ cup raisins if using and move the granola into a large jar or other airtight container for storage and start snacking!

Notes

BONUS: Take the rest of the coconut flakes and roast them up. They make for a fun crunchy snack and good lunchbox addition. You can even make them a little sweeter by coating them with a mixture of ⅛ coconut oil and ⅛ maple syrup. Roast for about 5-6 min at 325°F/160°C, flipping about half way through. They brown fast so keep a good eye on them.
